Steve is the artisan behind the nations most innovative range of oysters, the Moonlight Flat brand portfolio, regarded as the benchmark on leading menus. Steve says that if you buy pre-opened, tap-rinsed oysters you're missing half the exquisite taste of the luxury oyster experience.
