The S. Pellegrino World Number One chef two years running, René Redzepi of Copenhagen’s Noma, is celebrated as one of the chief proponents of the famed indigenous Nordic cuisine movement. Redzepi’s passion for native raw materials has recently culminated in the inaugural 2011 MAD Food Camp, a summit held by the chef aimed at promoting understanding of and engagement with local food production systems, dish by dish and season by season.

Multi-award-winning chef, Ben Shewry, has built his international reputation on a deep respect for his surrounding environment, hand-foraged wild ingredients as well as dishes born of childhood memories and a pronounced sense of time and place. Shewry is executive chef at Melbourne's Attica, the 2012 Age Good Food Guide Restaurant of the Year and the highest-scoring Melbourne restaurant on the current S.Pellegrino World's 100 Best Restaurants list.
Michelin starred serial restaurateur and pioneer of truly excellent cross-cultural cuisine, David Chang is also a visionary chef and master collaborator with some revolutionary ideas on food. Now with five New York offshoots of his ever-expanding Momofuku empire - Momofuku Ko, Momofuku Ssam Bar, Momofuku Noodle Bar, Milk Bar and Ma Peche - plus his very own magazine, Lucky Peach. Momofuku SeiĆbo, Chang’s first Momofuku restaurant outside of the USA, opened in Sydney, Australia in late October, 2011.

Three Michelin stars and a fourth place in the S.Pellegrino World’s 50 Best Restaurants has not made Massimo Bottura more conventional. Based in northern Italy at the renowned Osteria Francescana, Bottura’s approach to food looks to the future while maintaining a strong grasp on culinary history and traditions. He's a part academic, part performance artist, and all super-delicious chef.
