Bull boar sausages - made from recipes going back to the original Swiss italian settlers - are a heady mix of beef, pork, red wine and spices. They feature on local menus and are available from many of the local butchers - who each have their own closely guarded recipe.
Best local country pub for a leisurely lunch?
Both the Farmer's Arms in Daylesford and the Royal George in Kyneton are great. But for something really quirky, The Radio Springs Hotel in Lyonville is hard to beat.
