Claude Bosi says he was practically born in the kitchen of his parents’ restaurant in Lyons, the foodie heart of France. He rose rapidly through the great Parisian restaurants of Alain Passard and Alain Ducasse and then did something few French chefs would do - he headed for England to learn the language. He then did something else unusual - he stayed, earning first one Michelin star, then two, for his Ludlow-based Hibiscus restaurant – now successfully relocated to the heart of Mayfair where he is gaining much recognition for his own quietly poetic, harmonious, natural style.
