RuYi presents a five course duck-themed modern Chinese dinner.
Head chef, Sheng Fang, combines together his vast knowledge of food from his family’s private chef and his travels in many parts of the world, to create this exciting duck only dinner.
The five course dinner will start from Peking duck cones with modern interpretation, followed by apple mustard Peking duck noodle salad and RuYi’s signature duck Bao Bao filled with fusionend Sichuan mirin Mayo.
Main course will be pan fried duck breast and fresh shiitake mushroom dumplings followed by slow-cooked duck in Sheng’s master stock.
The menu showcases Sheng’s Chinese cultural background and how he has altered the Chinese cuisine to a modern taste.
The five courses of diverse flavours can be matched with three pairing wines as an option.
