Lesa, an Old Nordic word meaning ‘to gather’, is the name of the Embla team’s new restaurant, so it’s perhaps fitting that it’s where Danish chef Nicolai Nørregaard will join forces with Dave Verheul to cook a feast. With their shared passions of fermenting, cooking over fire and offering unlikely flavour pairings, the two chefs have earned the attention of critics and diners alike, with Nørregaard’s Restaurant Kadeau picking up several Michelin stars since the first location in Bornholm opened in 2007.
