Theatre of Ideas - Sustainability

Session Two is all about sustainability, reducing food waste, how restaurants can lead the way, and the people looking to the future.

Meet our presenters:

Peggy Chan (Hong Kong) – owner of Grassroots Pantry and real food advocate winning people over to plant-based eating in her native Hong Kong

Janice Leung-Hayes (Hong Kong) – food writer and social entrepreneur, Janice is the founder of Hong Kong's first ever farmers markets.

Anthony Myint (USA) – chef/owner of the Mission Chinese Food empire and sustainable restaurant The Perrenial, and co-founder of ZeroFoodprint

Chris Ying (USA) – Writer, editor, creator of the now defunct food journal Lucky Peach and co-founder of the ZeroFoodprint

Shinobu Namae (JPN) – chef/owner of L’Effervescence in Tokyo, Shinobu fuses French technique with a very Japanese approach to seasonality and quality.
