Ben has worked his way through restaurants across Perth, Sydney, Bahrain and Brisbane. His culinary journey began in his hometown of Perth and then onto Sydney before embarking on a role with Gulf Air to create and deliver the in-flight menu for first class passengers. Gulf Air gave Ben the rare opportunity to broaden his horizons and explore the fundamental passion and spirit Middle Eastern cultures share, resulting in fantastic food and culinary creativity.
After several years abroad, Ben returned to Australia eventually ending up in Brisbane where he worked with some of Brisbane’s most highly acclaimed and awarded chefs and restaurants alike (Enotecca 1889, Char Char Char and Urbane/The Euro) before launching Gerard’s Bistro.
It was a 2015 trip with his brothers exploring their homeland Lebanon that has inspired his menu at The Apo. Drawing on the French colonial history of Beirut, Ben has reinvented The Apo’s food offering, delivering a masterfully inspired yet natural hybrid of French and Lebanese cuisines with his signature playful twist.Gerard’s Bistro has received multiple accolades and notable mentions from various reputable publications including The Gourmet Traveller, The Weekend Australian’s Hot 50 and most recently Financial Review – Best Restaurant Queensland.
