Morgan McGlone could be responsible for getting Australians hooked on the mind-blowingly spicy fried chicken that’s a calling card of Nashville, Tennessee. The New Zealand-born chef is an unlikely champion of hot chicken, but after doing time at Sean Brock’s restaurant Husk in Nashville, he became hooked and wanted to share the combination of fried chicken and natural wine. Belles Hot Chicken was born. With seven locations across Victoria and New South Wales, Belles shows no signs of slowing down. McGlone is a regular collaborator with Melbourne Food & Wine Festival and returns this year with several appearances at The House of Food and Wine.
