Nicole Ponseca

Fresh off the back of launching I Am Filipino and This Is How We Cook, written with chef Miguel Trinidad, Nicole Ponseca will bring her brand of fun yet authentic Filipino food to Australia. The founder and creative director of New York restaurants Maharlika and Jeepney got her start in hospitality after moving to New York to pursue a career in advertising and discovering a lack of great Filipino restaurants in the city. Ponseca is also a motivational speaker for young Filipino adults and an active fund-raiser for charities in the Philippines.
