Much has changed in thirty years but Mario Maccarone and Mario de Pasquale’s winning formula remains. Together they kick-started Melbourne café culture, with excellent coffee, all-day breakfast, eccentric floor staff and an anything-goes spirit available seven days a week. Numerous Mario’s chefs and front of house staff have gone on to play significant roles in the Australian restaurant scene such as Maurice Terzini (Caffe e Cucina, Icebergs in Sydney), Karen Batson (Magic Mountain, Cookie, Toff in Town) and John Dench (Dench Bakers).
