-40 degrees, 24,000 acres and 12 seats – Magnus Nilsson at Theatre of Ideas

Returning for a fifth year over the MasterClass weekend is Theatre of Ideas - a gathering of inspirational minds that in 2013 will explore how we’ll be feeding ourselves for generations to come, guided by three forward-thinkers from the culinary world. 

First cab off the rank is Swedish chef Magnus Nilsson, (Fäviken Magasinet, Jämtland) who sources ingredients from the restaurant’s surrounding 24,000 acres of land, often battling with snow on the ground and -40 degree temperatures. Learn about the traditional techniques he uses – from hunting and gathering to pickling and fermenting - to serve the 12-seat restaurant, nestled among this remote mountainside farm.  

Magnus, along with two other presenters yet to be revealed, will ask questions such as why should we reduce our meat intake and why the chef/farmer relationship is so important.
