Summer Bircher Muesli recipe

To inspire you with healthy ideas to start your day our friends at Diabetes Australia - Vic have provided us with a simple and delicious Bircher Muesli recipe from one of their healthy food ambassadors, Travis McAuley, head chef at Hellenic Republic. This nutritious muesli is perfect for giving you some energy to get active this summer!

Serves 2



½ granny smith apple
1 cup rolled oats
1/3 cup orange juice
½ cup low fat milk
1 tbs currants
1 tbs dried cranberries
Pinch cinnamon
2 tbs low fat yoghurt
2 tbs pistachio nuts, toasted (see notes)
Fresh fruit (see notes)
Honey to drizzle


  1. Coarsely grate the apple (including the skin) into a medium sized bowl. Mix with the oats, juice, milk, currants, cranberries and cinnamon. 
  2. Cover with cling film and refrigerate overnight.
  3. The next day portion into two bowls. Top with low fat yoghurt, chopped fresh fruit, pistachio nuts and a drizzle of honey.

Notes: Pistachio nuts can be replaced with other nuts of your choice.

Fresh fruit can be whatever is in season. Figs, strawberries, pear, orange, berries etc.
