1 kg fine cracked wheat
1 tablespoon salt
2 cups hot water
1/2 teaspoon cinnamon
1/4 teaspoons white pepper
1 cup plain flour
2 tablespoons Olive Oil
1 kg course beef mince
1 cup continental parsley, finely chopped
1 large brown onion, finely chopped
Salt & pepper to taste

- To make the dough: add cracked wheat, salt, cinnamon and pepper to a large bowl. Mix well. Add hot water and let sit overnight covered with cling wrap.
- Next day, kneed cracked wheat mixture and gradually add plain flour into this dough. If the dough is a little tough add a little water to soften.
- To make filling: Heat olive oil in a heavy based pot. Add beef mince and stir until braised. Add onion and stir thoroughly for 2-3 minutes. Add parsley, salt, pepper and cinnamon. Let it cook for 2 minutes.
- To make the Koupes: Place a little oil in the palm of your hand. Add a golf ball size of dough into the palm of hand. Press to flatten it. Add 1 tablespoon of filling. Fold the dough over to seal the filling inside the pie forming the pie into an oval shape
In a pot or a deep fryer add a large amount of canola oil. Heat well until ready for frying. Place the Koupes loosely in the frying oil. Once brown remove and place on absorbent towel to drain.
Serve with natural yogurt or fresh lemon juice.
Note: If you desire you can use half pork / half beef mince.
