Ollie Wong-Hee worked his way through the kitchens of some of the most lauded restaurants in Australia over the last decade or so, Ester, Franklin and Sixpenny among them, before joining the opening line-up at Bar Heather, the restaurant and bar that has quickly captured the imagination of food lovers in Byron Bay.

“Classic French techniques are slickly deployed in service to the region's superlative produce,” wrote the editors of Gourmet Traveller when then named Wong-Hee their Best New Talent in the magazine’s most recent national restaurant awards. “And while the chef shows deft restraint with his careful use of Southeast Asian, South Asian and Middle Eastern colour, it's his regular meetings with local producers and suppliers that ultimately provide the inspiration for new dishes.”

For his part, Ollie says the opportunity to cook at Embla is “wild”. “I’ve looked up to Dave Verheul for everything he’s done and now he’s invited me to cook with him so I’m Incredibly honoured but riddled with imposter’s syndrome at the same time,” he says. “To be cooking with him at his place for this annual blockbuster of food and wine in Melbourne is mega. So grateful.”

Things are also quite mega on the drinks front, too. Embla is putting together what they call “an Embla/Bar Heather fantasy by-the-glass offering in addition to their already formidable regular wine list.

So it’ll be a meeting of inspired chefs and much-loved wine bars when he joins chef Dave Verheul and team Embla for a Sunday lunch on the last day of the festival – what better way to go out on a high?
