One of Australia's most celebrated chefs takes a break from barbecuing pork jowls, caramelising parsnips and glazing pinecones in his own kitchen to take over the Diner for the night, bringing with him all the creativity and commitment to no holds barred deliciousness that are central to his work.

Dan Hunter is a Victorian-born chef who learned his craft at Mugaritz, the famed three Michelin-star restaurant in Spain, before coming home and making a name for himself cooking at The Royal Mail in Dunkeld, attracting raves from Anthony Bourdain, among other authorities. His restaurant Brae, which he opened with his wife Jules Bagnato in the Otways, 90 minutes outside Melbourne, has consistently been rated one of the best places to eat in Australia by local and international guides for all 10 years of its existence.

You'll enjoy a cocktail designed by Dan Docherty from Collingwood bar of the moment Commis on arrival, and to take care of the rest of your refreshment needs for the rest of the evening, the Dan Murphy's team has curated a mouth-watering range of other drinks, all available for purchase, from local beers and spirits to cocktails and wine. Hosted by the inimitable Dani Valent, it's going to be quite the night.
