Why Goatboy? This is Jonathan’s focus – birria is a classic from Jalisco, a brothy stew rich with garlic, cumin, and a whole lotta chilli. And while these days it’s made with all kinds of red meat, the first choice for many a birria connoisseur is goat. He learned the trade from his father, who founded their birrieria, Birrieria Zaragoza, using a century-old family recipe, and made trips to the family hometown of La Barca in Jalisco to fine-tune it. Meanwhile, Jonathan had, to use his phrase, “worked the Michelin circuit” of ambitious restaurants in Chicago before deciding to bring it all home.

“I grew up with cooking as an expression of love both for the ingredients being used and for those you are cooking for,” says Jonathan.
