Toss together a bunch of unfamiliar Thai ingredients and the result is likely to be a riot on the plate – but if you know how to balance, taste and blend, you've got a solid foundation on which to cook. This special edition of the popular "Cooking with Cooper" classes, presented by Chin Chin executive chef Benjamin Cooper, focuses on some of the fundamental techniques applied in the kitchen at the evergreen CBD Thai favourite Chin Chin.

In the hands of MDI winemaker Kevin McCarthy, you'll also learn how to pair wines with your feast and find out what goes into some of the most exciting skin-contact wines in Australia.

The hands-on learning experience will be followed by a Chin Chin feast matched to MDI wines.
