“Third-culture cooking where every dish has a story.” That’s the motto at Jun’s in Dubai, a place where chef Kelvin Cheung has made a name for himself with dishes that celebrate the world as they crisscross borders in the service of maximum flavour.

“Chef and restaurateur Kelvin Cheung’s larger-than-life personality has found the perfect outlet here in Downtown Dubai,” is how the Guide Michelin sees it. “His Chinese heritage, Canadian/American upbringing and international peregrinations all inform his cuisine.”

Those peregrinations result in a menu bursting with ideas, bringing together the likes of spaghettini with lobster and XO sauce, chicken layered with Kashmiri, boriva and jalapeño peppers and a dusting of Sichuan pepper, not to mention mapo burrata and char siu short ribs.

Spice Temple chef Andy Evans typically confines his interests in the main to the cuisines of China (especially Sichuan, Yunnan, Hunan, Jiangxi, Guangxi and Xinjiang) and its borders, but is no less passionate about going big on flavour and laying a table for a good time.

This event, brought to Melbourne in collaboration with Conosh, promises an aromatic, fragrant and positively flamboyant experience, over a nine-course degustation with the offer of vegetarian and non-vegetarian options, and matched beverages. Let’s spice it up.
