The World’s 50 Best Restaurants named Orfali Bros Bistro its number-one spot in the Middle East, just one of the more glittering prizes that the Dubai restaurant has picked up since the doors opened in 2021. The brothers in question, Mohamad, Wassim and Omar, hail from Syria, and their takes on the traditions and flavours of Aleppo, their home town, have made them the toast of the Arab culinary world.

The depth and complexity of the food of Aleppo give the Orfalis a rich palette to draw upon. “The food of Aleppo is a culmination of civilizations,” says eldest brother Mohamad. “It started with its early inhabitants. Colonizers, foreigners, orientalists, and immigrants passed through. Aleppians are natural food critics. You leave Aleppo with a developed tongue.”

The classic Halabi cherry kebab, fattoush, shish barak intermingle with adobo, gyoza, gazpacho and other ideas from around the globe to create a singular vision of the food of the Middle East, inventive, evocative, and above all extremely tasty.

“Knowing what I know about the passion for Middle Eastern food in Melbourne, it’s always been a dream for me to visit the city,” says Mohamad Orfali. “I’m excited to get into the kitchen with Shane and the Maha team and get cooking.”
