Peter Gunn and the Ides team welcome New Zealand's Chef of the Year, Zennon Wijlens, to Smith Street, for a takeover, bringing the brilliance that have won them three hats at Paris Butter in Auckland.

Opened by Nick Honeyman in 2016, Paris Butter packs some serious heat. Honeyman has worked at top-flight Paris venues such as L’Astrance and L’Arpege, while Wijlens' CV includes time at leading Australian venues like Tetsuya's, Momofuku Seiobo, Spice Temple and Cumulus Inc.

Cuisine magazine describes Wijlens as "an exceptionally talented chef" who leads "a committed team on a mission to bring elegance and innovation together on the Paris Butter menu". Your taste of the innovative elegance here in Melbourne will begin in March, Ides' new bar, for a seasonal cocktail and a duck liver parfait tart, before you make your way next door to the Ides dining room to settle in for a three-course course Evolution menu, replete with bread and snacks from Paris Butter, all created with a dedication to local produce and sustainability.
