The New York Times just named Vern's among its 50 top restaurants in America, while Conde Nast Traveller calls it "one of Charleston’s hottest tables for unfussy everything”. Daniel “Dano” Heinze and Bethany Heinze have wowed South Carolina for years – Dano on the pans, cooking up Lowcountry ingredients, Bethany complementing the food with equally impressive pours. After years at the landmark McCradys, as well as a detour to essential Los Angeles addresses Animal, Jon & Vinny’s and Gjusta, the pair hung out their own shingle at Vern’s in 2022 in what the US press dubbed the most important Charleston opening of that year.

Now they’re coming to Melbourne to collaborate with chef Casey Wall and other fellow travellers at Capitano (with ample wine assistance from Bar Liberty) for a dinner that captures the best of the American bistro style circa 2024: big on flavour and low on fuss.
