The home talent from Andrew McConnell’s Trader House group is Hannah Holleran, an English-born chef whose mentors run from Michel Roux Jr to Melbourne’s own Scott Pickett, and who works as a junior sous at the juggernaut that is Gimlet at Cavendish House, and New Zealand-born junior sous James Grant from landmark city diner Cumulus Inc. They’re teaming up with Niko Pasieka, the French-born, Mandarin-speaking chef at Maha Bar, the sensation that is author and Etta head chef Rosheen Kaul, and with Audrey Allard, the Lune and Pt Leo Estate alumna who has just opened Holy Sugar patisserie to instant acclaim on Northcote High Street.

Together with the Cutler & Co crew, they’re putting together a five-course dinner that zooms in on everything that’s good about cooking (and eating) in Victoria right now. Backed by one of the city’s favourite front-of-house teams and a truly superb cellar, it’s going to be quite a night. Don’t miss it.
