Let’s push the boat out. One of Melbourne’s most glittering dining addresses throws open the doors to five very different, very impressive young chefs for one night only this August as Stokehouse hosts a 30 Under 30 dinner to remember.
Vyvyan Huynh, a chef whose journey took her from classical French to classical sushi back home in Canada before she joined Stokehouse, where she now works as a junior sous, leads the fray as the home-venue talent. She’s joined by a very impressive line-up, featuring Hugh Allen, one of the youngest ever chefs to work at Noma in Copenhagen, and executive chef at Vue de Monde since 2019, Cam Tay-Yap, an Attica alumnus who is now head chef at Amaru, Ellie Bouhadana, the supper-club savant who runs the kitchen at Collingwood hotspot Hope St Radio, and new pastry sensation Anneliese Brancatisano, now bringing her sweet skills to Hector’s Deli.
With the guidance of chef Jason Staudt, served by one of the best floor teams in the business and perched on the glimmering jewel that is Port Philip Bay, this is an alignment of the stars that you won’t want to miss.
