Chin Chin's Club Med

Mediterranean wines and southeast Asian flavours come together for a night to remember

Head to Club Med done the Chin Chin way. For one night only, the team will guide you in an exploration of Mediterranean grapes such as vermentino and nerello mascalese paired with Chin Chin's energetic southeast Asian cooking. Bespoke dishes not found on the regular menu will be served across five courses with matched wines in bountiful ‘feed me’ style.

Menu
First course:
- Salmon tartare w smoked salmon roe, finger lime
- Prawn dumplings with chilli and prawn oil
- Duck liver parfait en croûte with herbs
- 2020 Chalmers vermentino, Heathcote, Victoria

Second course:
- Vietnamese chicken salad, cabbage, nuoc cham and sesame rice cracker
- 2017 Belleruche Cotes du Rhone white, Rhone Valley, France
“The Côtes du Rhône vineyard is one of the oldest in France, blending grenache blanc, clairette and bourboulenc, the most celebrated Mediterranean white grapes, offering aromas of green apple, hawthorn and white blossoms, citrus aromas and exotic fruits; well-balanced lot of fatness and length”

Third course:
- Fragrant and earthy roast tomato curry with red mullet, charred mussels and Thai basil
- 2019 Robert Oatley grenache, Mc Laren Vale, South Australia
“Grapes from the southern end of McLaren Vale. This is an unwooded red wine; deep youthful red/purple colour with a gloriously fresh, perfumed aroma of rose, violet, red and darker berries, the palate intense and gentle, soft and round and elegantly, structured, with great drinkability already and oodles of charm. Lovely wine.”

Fourth course:
- Twice-cooked beef short ribs with bone marrow, slow-cooked eggplant, king brown mushrooms, okra and pink peppercorn relish
- 2018 Tenuta delle Tere Nere Etna Rosso, Sicily, Italy
“Made from very fine nerello Mascalese and nerello cappuccio, some of the most planted grapes of sicily; a light, perfumed nose erupts into ripe red fruit flavours and before transitioning to an igneous, earthen finish.”

Fifth course:
- Baked apple crumble, orange curd ice-cream, fennel pollen
- NV Campbells Rutherglen muscat, Victoria
“The Campbells story at Rutherglen began in 1870 and is one of evolution, tenacity and determination, building on the experience of generations past with a dedication to innovation. The heady, light amber-coloured non-vintage tokay (muscadelle) is pure marmalade and molasses offered in an unctuously textured style.”
