Inspired by ingredients from the Papuan highlands and village flavours, Toto will fire up the oven to make slow-cooked pork with foraged leaves and grilled aromatic vegetables while Nasution, honouring his spice-rich Sumatran heritage, will prepare Batak arsik fish, ayam tangkap, Aceh-style chicken with crisp herbs and green chilli sambal. And for dessert the Makan team will present a modern twist on classic Indonesian desserts.
