First course

Kingfish sashimi
Betel leaf of cured scallop with candied pork, peanuts, coconut, scud chilli and pomelo
Smoked eel, beetroot relish, rice cracker and smoked chilli

Second course
Drunken-chicken salad, daikon, cucumber, cabbage, snow pea and yellow bean dressing
Jellyfish, wood-ear mushroom, cashew chilli praline, salt and orange nahm jim jeaw

Third course
Sinhalese-style black curry of rotisserie suckling pig
Served with roti, sticky rice and iceberg and dill salad

Fourth course
Soy-glazed roast duck with spiced sesame and turmeric smashed butter beans
Salad of pickled lily blossoms, pomegranate, garlic chives and coriander

To finish
Hibiscus and pandan marshmallows
