1st Course – served canape style
Betel leaf of cured scallop, with candied pork, peanuts, coconut, scud chili and pomelo
Smoked eel, beetroot relish, rice cracker, smoked chili
2nd Course –
Drunken chicken salad, daikon, cucumber, cabbage, snow pea and yellow bean dressing
Jelly fish, wood ear mushroom, cashew chili praline salt and orange nahm jim jeaw
3rd Course –
Sinhalese style black curry of rotisserie roast suckling pig
Served with roti, sticky rice and iceberg and dill salad
4th Course –
Soy glazed roast duck with spiced sesame and turmeric smashed butter beans
Salad of pickled lilly blossoms, pomegranate, garlic chives and coriander
To finish –
Marshmallows – two flavours – hibiscus and pandan
