Corsica is famous for its wild boars, beautiful wines and rich culture. In a Corsican spin on pork and pinot, wild boar from northern Victoria appears in chef Sam Green’s Corsican menu, matched with Corsican wines, including some made by Australian winemaker Rose Kentish.

Starting with chestnut polenta, taking in spaghetti with Corsican pork, tomato and olive ragù, and a spectacular main course of roast wild boar leg with roast potatoes and cannellini bean stew before a sweet finish of Corsican frittoli and candied bacon ice-cream, this is a wild taste of the Mediterranean you won’t want to miss.
