Get your taste of tomorrow today with Starward’s Rising Stars. Four of Victoria’s most exciting new chef talents join us over two weekends at our purpose-built bar at the Queen Victoria Market to give us a flavour-packed piece of their culinary action alongside some delicious cocktails.

On Saturday 21 August, Scott Lord, chef at New Quarter, presents a playful ode to the flavours of Vietnam in the form of hot chicken croquettes with Laughing Cow cheese and nuoc mam caviar.

On Sunday 22 August, Nabil Ansari, the Sunda/Aru sous chef who gained notice in 2020 with his Ansari Indian side-project, takes the reins, doing his version of vada pav, the street-food favourite which, in its classic Mumbai iteration, sees a hot fried potato dumpling swaddled in a soft roll and dressed with green chilli and chutney.

Lorena Corso steps up to the plate on Saturday 28 August. You might know her from the kitchen at Napier Quarter, her work with the Thick Accents project, or her recent collaboration with fellow Sicilian chef Joe Vargetto, of Mister Bianco. For Rising Stars, Lorena channels the street food of Palermo, presenting panelle, Sicily’s chickpea fritters.

And last but by no means least comes Rosheen Kaul, an alumna of Lee Ho Fook and Dinner by Heston Blumenthal who has grabbed the attention of food lovers in Melbourne co-authoring 2020’s hit Isol(Asian) Cookbook and taking the food at Brunswick East hotspot Etta to new levels of excellence. For Rising Stars on Sunday 29 August, Rosheen has plans for a hot Beijing-style chicken sandwich with pickled green chilli mayonnaise and iceberg lettuce.

All of these snacks are whisky-friendly, and there’s plenty of whisky to drink, with Starward laying on a generous choice of flights, signature cocktail serves and Winter Edition cocktails designed to complement each Rising Star’s offering, as well as bottle sales if you’d like to take the good times home with you.

Starward Rising Stars takes place on Queen Street at the Queen Victoria Market from 11am to 7pm on Saturday 21 and Saturday 28 August and from 11am to 5pm on Sunday 22 and Sunday 29 August. MFWF at QVM is cashless, with contactless payments thanks to Mr Yum; bring along your credit/debit card for purchases.
