The wine-drinkers of Australia owe Mat Lindsay and John Paul Twomey a debt of gratitude; along with their restaurant partners, Lindsay and Twomey have created Ester in Sydney and the Carlton Wine Room in Melbourne: two powerfully compelling places to eat, drink wine and be seriously merry. Now, for one night only at the Melbourne Food & Wine Festival, the chefs of these two deeply adored venues are getting together to trade plates in a four-course dinner that will be as fun as it is full-flavoured. Over three savoury courses and a dessert, both chefs will put down a dish to be enjoyed side by side, each paired with a (sensible) pour of wine, one glass chosen by team Ester, the other chosen by team Carlton Wine Room.
