For the past 2,000 years, soy sauce has been a staple in all variations of Chinese cooking. It plays a central role in both traditional and modern Chinese cuisine.
To honour and explore this history, RuYi Modern Chinese presents The Joy of Soy, an evening putting the spotlight on this most essential ingredient. Chef Sheng Fang has designed a five-course set menu to showcase the flavour and power of soy sauce into various dishes, in ways you've probably never tried before.
Over the course of dinner you’ll enjoy handmade tofu with caramelised soy, a kingfish ceviche with citrus-infused soy, wontons with garlic soy, and chicken wings with a spicy soy sauce. For the main course, meanwhile, chef Fang presents duck slow-cooked in masterstock, the classic Chinese soy-based stock.
