Visionary Tel Aviv chef Eyal Shani, James Beard chef of the year Michael Solomonov from Zahav in Philadelphia, and Lee Tiernan, the rock ’n’ rolling chef of London hotspot Black Axe Mangal are joined by Sydneysider Mat Lindsay, of Ester fame, wearing his new Shwarmama hat, and hometown hero Shane Delia from Maha, in a dinner that’s all about tongs over tweezers, meat over fire, and the big-hearted conviviality and commitment to having a really wild old time that are the essence of Middle Eastern hospitality.
