Marc-Olivier Frappier entered the Joe Beef universe at the tender age of 21 and never looked back. Today he’s a partner in the team’s three latest ventures, Vin Papillon, Mon Lapin, and McKiernan’s Luncheonette, all in Montreal. Before that, he learned to cook from Italian nonnas in Emilia-Romagna and at ITHQ in Montreal before working in New York City and Italy. His appearance at Melbourne Food & Wine Festival is a rare chance to hear directly from a key member of the Joe Beef team.
