Nicolai Norregaard

An early exponent of the Nordic Cuisine movement along with René Redzepi, Nicolai Nørregaard was hunting, fishing, pickling, foraging and growing his own vegetables long before it was considered cool. Out of necessity, Nørregaard’s Restaurant Kadeau has operated on the idea of self-sufficiency since opening its doors in 2007. Located on the island of Bornholm, where the chef grew up, Restaurant Kadeau was joined by a sister restaurant in Copenhagen in 2011, with both restaurants earning Michelin stars and critical acclaim.
