Dialling In: Maverick

New Melbourne cafés, by the numbers.

Maverick’s operators, Elisa and Adam Mariani, have over a decade of hospitality experience, running Mayday in Richmond and Greta in the CBD. Maverick aims to be the go-to brunch destination in the CBD, with new-age brunch dishes, excellent coffee and cocktails.

The beans:
We source our beans from Axil Coffee Roasters. They have a direct-trade relationship with coffee farmers, and roast various flavour profiles suited for different brews. This week we're running a Colombian natural batch brew from Cofinet Smallholders, with raspberry, nectarine and lemon iced tea tasting notes, delicious. Our single origin right now is from Kilimbi in Rwanda, honey-processed, and it tastes like poached apple, black tea and golden syrup. We choose Axil because we share the same values in sustainability, quality and excellent coffee.

What they’re doing with them:
We do the usual suspects because most of our customers know what they want. A house blend and a rotating single origin. We make sure we are always ahead of the coffee game, offering a variety of alternative milk, a batch brew and iced filter as well as Espresso Martinis for something a bit stronger.

To eat: 
Chef Eugene Yap leads the kitchen, bringing his expertise of brunch classics from Mayday Coffee and Food, and The Kettle Black. Eugene makes as many of the elements in-house where possible, and everything on the plate has been purposely thought out. Take the rye topped with a mushroom medley, smoked curd, hazelnut, vincotto and sage for instance, or our benedict with house pastrami, potato hash, poached eggs, béarnaise and a pickle.

The design brief:
The brief was simple: to provide a beautiful sanctuary that feels modern and calm, away from the hustle and bustle of the CBD. The interior by Pitch Architecture + Design features a terrazzo bar set amongst solid peach and navy colours.

Number of potted plants:
We have five indoor plants so far, we think it’s just the right amount for the space.

Merch:We have two ceramic mugs with Maverick branding, as well as our reusable Fressko coffee travel mug. We sell these in store, and those who join the Maverick crew get $4 batch brew for life.
