Melbourne Sake 

Publican Iain Ling, owner of what he describes as "best pub in the world", The Lincoln, has strong opinions on booze. 

One of those is that Melbourne Sake’s recent release is a must-drink beverage; a local success story he says tastes ‘god-damn delicious’ and very much like ‘your next favourite sake’.

Started by two good friends with a passion for Japanese booze, Matt Kingsley-Shaw and Quentin Hanley met in 2014 and spent the next few years exploring new styles and producers, learning as much as they could about both, before starting Melbourne Sake. 

Ling recommends going hard at your local fromagerie – or just the dairy aisle at the supermarket – if you're looking for something to snack on once you pick up a bottle. Think soft cheeses – brie or camembert – or perhaps an Alpine aged hard cheese. For those of you staying clear of lactose fear not: this savory drop pairs perfectly with beetroot.
