Bottled cocktail pioneers The Everleigh Bottling Co have created their first non-alcoholic offering, a Bellini, just in time for summer. Joining their range of bottled cocktails, it’s a booze-free take on the Venetian classic that can be enjoyed straight from the fridge (or the Esky).
Here's Michael Madrusan, bar czar and company co-founder, on why you need it in your life.
Who are you and what are you all about?
My wife Zara and I run a company called Made in the Shade, which comprises our Melbourne venues, The Everleigh, Heartbreaker, Connie’s Pizza and Bar Margaux, as well as Australia’s first, hand-cut cocktail ice company, Navy Strength Ice Co.
We’re drinks people by trade, with a purist approach to cocktails. Our method is one of careful and precise attention to detail. Every step in the preparation of making and serving a cocktail has been considered and we feel it shows in the drinks we produce.
Give us the elevator pitch, what are Everleigh Bellinis?
The Bellini is our interpretation of the classic Italian aperitif cocktail. It’s expertly balanced, complex and delicious. It just happens to be non-alcoholic.
Explain like we’re five; how do you make them?
The classic Bellini recipe is a mix of white peach purée and Prosecco. Like the best classic cocktails, it’s incredibly simple, and entirely satisfying. The Everleigh Bottling Co Bellini is a carbonated cocktail that marries fresh peach, grape juice, and verjus, to create what we like to think is an expertly balanced alcohol-free ready-to-drink bottled cocktail.
What excites you about this project?
We’re passionate about making world-class cocktails accessible outside of the world’s best bars. You may know our Famous Four packs (Martini, Negroni, Manhattan, Old Fashioned) which we brought to the public in 2015, and more recently, the sparkling cocktail range that we released earlier this year.
The Bellini is our first non-alcoholic bottled cocktail, and we have more alcohol-free cocktails pegged for release in 2022. The non-alcoholic range gives us the diverse offering we always wanted. We’re ensuring there’s a drink for everyone, whatever the occasion.
What are the perfect conditions to enjoy your Bellinis?
If the moment calls for a cocktail, the Bellini should be there. You no longer have to be ‘drinking’ to enjoy a bar-quality cocktail. Enjoy the Bellini with your Sunday brunch after eggs and fresh coffee, bring it along to picnics in the park with soft cheese and fine friends, or grab one straight from the fridge, after a long day of Zoom calls.
Our sparkling cocktails are designed to be enjoyed in good company, because a moment of togetherness is something to celebrate.
Are they here for a good time or a long time?
Both. The Bellini is the first of a range of non-alcoholic cocktails we'll be releasing over the next twelve months. Perfecting a non-alcoholic cocktail is much harder than those with alcohol. To create something delicious and complex without relying on the body being booze, you have to be very creative and inspired. The Bellini took many months to perfect, and we tried so many variations. We’re really proud of the result.
