Chef JP Anglo doesn’t cook for his ego, he cooks for his people: so reads the compelling headline of a Vogue feature on the Bacolod-born chef. Every table Anglo lays, they say, “is its own mini fiesta, attended by sizzling plates of sisig, chicken inasal, and glorious tortang talong”.

Melbourne’s own Serai Kitchen, known for its roaring woodfire, exuberant atmosphere, and modern and honest take on Filipino cuisine, is honoured to welcome JP Anglo, owner and chef of Sarsa restaurant in Manila and its sister venue in Dubai, Kooya.

This takeover will be about exploring the heart and soul which define every mouthful of Filipino cuisine, offering diners a chance to experience the rich, diverse flavours of the Philippines in a modern and refined setting. Let’s party.
