A dining experience that celebrates the raw beauty of nature: each course has a distinct colour theme, married with magnificent local produce.

At the heart of this event is Gippsland, the food bowl of Victoria. A region of rich biodiversity and ever-changing landscapes. "We are inspired by its abundant summer harvest, and all that it provides," says Alejandro. "Monique is a remarkable talent, and I'm so looking forward to cooking with her."
