Together they’ve launched a limited-release of Remedy kombuchas: the refreshing Lime Spider and the nostalgic Apple & Rhubarb Crumble. Here’s Attica chef Ben Shewry with the lowdown.
What excites you about this project?
To collaborate with another legendary Melbourne brand is really exciting for me. And working in an area that I have never really worked in before. I learnt a lot! I never realised how handmade these drinks are – it was wonderful to see the process. It has also been really fun to see how happy the flavours are making people and also tapping into that nostalgia.
Give us the elevator pitch: what makes your kombucha different and/or special?
Remedy is the real deal. It contains no sugar, is all-natural and is brewed the old-school way over 30 days. The Attica x Remedy Kombucha limited-release flavours are a nod to childhood and the perfect drinks for summer.
How do you make it?
Remedy is still brewed the old-school way, using a culture that’s a descendant of the first batch of kombucha the founders made back in 2012 on their kitchen bench. They start by making a big batch of sweet tea, using high-quality tea leaves and raw, organic sugar. Once cooled, they add the kombucha culture and leave it to ferment in a temperature-controlled environment for 30 days in huggable-sized pots. Over this time, all the sugar is eaten by the bacteria and yeast. They add a touch of plant-based sweeteners and flavour it with low-fermentable juices and natural extracts, ensuring no sugar is added to the brew. It’s then bottled and canned and sent out across Australia (and the world).
What are the perfect conditions to enjoy Attica x Remedy kombucha?
The perfect time to drink these would be on a hot day at the beach (served iced cold!) but I think these are great with food as well. I’ve been drinking them with dinner or in the place of a sweet treat in the afternoon.
