Diego Huerta Chabert is a 25-year-old Mexican-French, Michelin-pedigree chef helming the kitchen at South Melbourne's swanky-experimental Lûmé, where he has recently been promoted to the top job from sous chef.

Hi, my name is Diego Huerta Chabert

You might remember me from such establishments as Copenhagen's Geranium, where I was chef de partie for three years.

I’ve been cooking for 13 years, most of which were spent in three-Michelin-star kitchens across Europe before I arrived in Australia in March 2020.

My brief for my new gig is to create an exceptional dining experience for our guests, focusing on the best local Victorian and Australian produce.

And I’m passionate aboutcooking! I love discovering new ingredients, I’m passionate about using all the knowledge I’ve learned from restaurants I worked in throughout Europe, combining it with things I learned through my cultural heritage – Mexican and French – and using fantastic Victorian produce to bring it all together, respectfully. 

Which means I like to cook with ingredients from the coast, the forest – pretty much all around Victoria – so it’s almost like our guests get to have a little trip around the country when they dine with us. At the moment we’re cooking dishes with mushrooms, abalone, duck, John Dory, seasonal vegetables, but our menu changes regularly to incorporate each new season’s produce.

I’d like you to come in and see us so you can experience my version of food and cooking, and so that I can share my experiences with you: the emotional connections I developed from dishes I’ve created all over the world. We want it to feel like a home away from home. 

And if there’s one thing I don’t want you to leave without trying it's my abalone, lightly cooked in beurre blanc and finished with shaved, dehydrated abalone, charcoal oil and baerii caviar. People love it!
