Join chefs Robbie Noble and Jasper Avent in the Residence kitchen as they walk you through how they get the most out of a whole Aurum chicken. Learn high level techniques to maximise flavour and minimise waste. Hear from the producers of Aurum poultry about the ethics around their farming. Enjoy a five course set menu where you will see the finished product on your plate.

Residence is a restaurant dedicated to education and innovation, and this intimate Aurum “beak to feet” event explores the ethics of poultry farming while showcasing how to respect and maximize the product. Gather at the bar around the hearth as chefs guide you through breaking down and preparing a bird, while Aurum’s producers share their farming practices and philosophy.
