The Mighty Moonee Ponds, a new venue in Melbourne’s north that spans everything from pub meals to terrace cocktails and a special night out, is putting the food front and centre, installing a chef with five years’ experience in Heston Blumenthal’s restaurants. Meet Adrian Corigliano.

You might remember me from such establishments as Dinner by Heston Blumenthal in London and Melbourne. I came to Melbourne as a part of The Fat Duck team and stayed on when the restaurant transitioned into Dinner. I’ve also spent time in the kitchens of Wildfire and Aria in Sydney and Le Gavroche in London.

I’ve been cooking for 18 years, five of them in Melbourne.

My brief for my new gig is good food cooked simply. It’s all about great, clean flavours that are appealing to everyone. After being in the finely tuned kitchen of Dinner by Heston, this is a chance for me to break free and create my own menu of approachable and seasonal dishes where the ingredients really speak for themselves.

And I’m passionate about working with the best ingredients I can get my hands on and producing amazing food that people will enjoy. I’d like people to look at the menu and want to order everything on it!

Which means I’ll be cooking things like sticky pork belly parcels, with the pork belly simmered in a master stock and paired with tamarind caramel, shallots and native greens. Or perhaps grilled prawns with a refreshing chilli-lime dressing. There’s also a great snapper ceviche: fresh-caught snapper, jalapeño, coconut, lime and red onion.

I’d like you to come in and see us so you can experience a meal that is comforting, tasty and affordable. One where you leave feeling completely satisfied and happy, thinking about when you’re coming back to try all the other dishes on the menu.

And if there’s one thing I don’t want you to leave without trying, it’s our Strawberries and Cream dessert, which features strawberry crème pâtissière, strawberry sorbet and strawberry syrup. My wife is an incredible chef who also worked at Dinner by Heston and this is one that I often cook for her. If I can get her tick of approval, then I know it’s good! The Kangaroo Island Spritz is also a must-order. It uses a combination of gins from Kangaroo Island Spirits, including the O’, Wild, Old Tom, Mulberry and Whisky Barrel-Aged, and I reckon it’s the best thing you’ll drink this summer.
