You might remember me from such establishments as The Grand in Richmond
My brief for my new gig is delicious, nourishing Italian food for any time of the day, to eat in or to take away. At breakfast you’ll find cacio e pepe eggs with pancetta, and sardines with salsa verde. As lunchtime approaches the options grow: salads such as orechiette with cherry tomatoes, hearty rabbit saltimbocca and osso bucco with soft polenta. By 3pm the wine bar comes alive, with wines by the glass or bottle, classic cocktails and accompaniments such as sardines, charcuterie and cheese.
I’m passionate about Hawthorn Football Club, and regional Italian cuisine.
Which means I’ll be cooking lots of dishes from Sicily, a region that I absolutely love. It’s inspired a number of the dishes on the menu, including the caponata with buffalo mozzarella, mussels and vongole with white wine, garlic, parsley and chilli and, of course, cannoli with a traditional ricotta filling. Pork cotoletta with Italian slaw is already proving popular with the locals. It’s a Milanese dish and one of my own favourites.
I’d like you to come in and see us at Lagotto so you can relax, enjoy a full meal or simply a plate of salumi and formaggi with a bottle of one of our excellent Italian wines and some warm hospitality.
In case you were wondering, Lagotto is a breed of dog that comes from Emilia-Romagna in Italy. The dogs are renowned truffle hunters. One of the co-owners of Lagotto has one named Rupert.
My favourite Italian product that we serve is COS Frappato, a playful, juicy and organic red wine from Vittoria in the south-east of Sicily, produced by a renowned group of winemakers.
If there’s one thing you can’t leave without trying it’s our house-made cannoli filled with fresh ricotta, candied orange and chocolate nibs.
