Liminal, the eagerly anticipated all-day eatery, wine shop and grocer from Nathan Toleman (who also established Higher Ground, Kettle Black and Top Paddock), is now open in Melbourne’s CBD. We asked executive chef, Martin Webster, to tell us all about it.

Hi, my name is Martin Webster

You might remember me from such establishments as Jackalope Hotels and Montalto.

My brief for my new gig is a cafe meets wine store meets produce store in the foyer of one of the most beautiful building refurbs in Melbourne. We create simple, nourishing, very enjoyable food that you can’t wait to eat every day.

I’m passionate about fresh produce and flavour.

Which means I’ll be cooking lots of fresh salads and very tasty sandwiches. Salads are driven by what looks good at the market, so at the moment that includes a nice pumpkin and fried chickpea number. Some of the favourite sandwiches so far have been the mozzarella and white anchovy toastie, the porchetta ciabatta and the mapo tofu and noodle bun.

I’d like you to come in and see us at Liminal so you can take a break from your day to day and spend some time on yourself. Let us take care of you for a bit.

If there’s one thing you can’t leave without trying it’s the hot rotisserie chicken roll. It’s on a sourdough brioche bun and it comes with gravy, of course, which we make from the roasting juices.
