Is this the best hummus money can buy?
To celebrate International Hummus Day (Monday 13 May), why not go all out and try the tricked-up hummus that Bar Saracen has created especially for the occasion?
The Hundred-Dollar Hummus involves your favourite chickpea-tahini purée with chopped truffle folded through it and a luxe topping of Western Australian marron that’s minced and cooked in saffron butter. Yarra Valley roe is the finishing touch. The restaurant’s puffy Egyptian-style pita is served on the side so you can dip and swipe to your heart’s content.
Hummus topped with minced lamb is found across the Middle East, but Saracen owner Joseph Abboud has had a version with prawn on the restaurant’s menu since opening. The premium version with marron will be available all week at the restaurant to mark International Hummus Day.
“We wouldn't serve any old thing just so we can call it expensive,” says Abboud. “We've taken a while to fine-tune it and it's a ripper.”
