Deep-fried soft shell crab with chilli, black pepper, salt and coriander

2 medium soft shell crabs – approximately 150 g

Chilli Paste

2 cleaned coriander roots
large pinch of salt
large pinch black peppercorns
1 scud chill
1 long red chilli
2 tablespoons unpeeled garlic
1 cup oil

Stir Fry

1 teaspoon pureed crab roe – if any
very large pinch of black pepper
1 tablespoon white vinegar
large pinch of sugar
1 tablespoon fish sauce
1 tablespoon chopped coriander
nice pinch of additional black pepper


  1. Cut the gills out and clean the crabs.
  2. Make the somewhat paste.
  3. Deep-fry the crab in the oil until golden brown and crispy.
  4. Drain well and pour off all but 2 tablespoons of the oil.
  5. Add the chilli paste and crab roe, if any, and fry until fragrant.
  6. Season with the vinegar, sugar, fish sauce, salt and pepper.
  7. Add the deep fried crab.
  8. Serve and garnish with chopped coriander and sprinkle with additional black pepper.
