William Gleave takes over the kitchen at Brico for a week this festival with a set menu drawing on his experiences throughout Europe, Japan, Tasmania and his current kitchen, Sargasso, a coastal-inspired restaurant in Margate, UK, owned by the good people from Brawn in London.
When he was at Bright in London Fields, The Guardian described Will's food as "future-facing, lovingly sourced and whip-smart", while Vittles said his time at Hill & Szrok tranformed it into "a steakhouse that exceeds every reasonable expectation".
Will and Brico's founders are friends with a shared passion for local produce, so you can expect many of Victoria’s best small farms to be represented across both the food and wines over the week. "Will's food is nourishing, exciting and honest," says Brico co-owner Phil Bracey, "It's a stunning representation of the best of modern British cooking."
