Love a steak but want to go deeper on breed, cut and depth of flavour? Get the stamps out for The Great Australian Steak Passport, a journey across the country through a multi-course dinner, each course showcasing a single cut of beef, presented at Blackbird in Flinders Lane.
Over five courses, taste premium cuts from some of Australia’s finest producers, including Five Founders Beef – Australia’s first certified carbon-neutral beef – and Scenic Rim Native Beef, nourished with barley marsh from Boonah Brewing Co from Ghanem Group’s family farm in Tarome, Queensland. Guests will also taste rare breeds including Charolais, Chianina and belted Galloway, sourced directly from farmers who specialise in small herds and single-breed cattle.
Each cut is cooked on the wood-fired Josper grill, where aromatic woods such as apple, cherry, peach and chestnut impart distinctive notes, drawing out the nuances of every cut. Overseen by Ghanem Group executive chef Jake Nicolson and Melbourne executive chef Tim Menger, this one-night only menu is paired with fine Australian wines, craft beer from Boonah Brewing Co and expertly crafted cocktails.
